Real Balneario de Salinas – Isaac Loya Restaurant

Isaac Loya

Driven by an unwavering vocation and a deep love for cooking, Isaac Loya has built a career true to his principles. From his early beginnings in the dining room to leading the kitchen and restaurant management, more than 17 years of dedication have shaped a distinctive style born of constant curiosity and deep respect for gastronomic culture.

His experience, forged between stove and table, translates into a cuisine that evolves without losing its essence. His creations combine tradition with renewed touches, recognizable flavors with original nuances that define his culinary signature.

Committed to the legacy he has inherited, his nonconformist spirit and constant pursuit of excellence continue to strengthen a reputation that grows steadily within the demanding landscape of Asturian haute cuisine.

History

As it moves toward its 35th anniversary in 2026, the restaurant reinforces its focus on the Cantabrian Sea as an essential pantry, its connection to the land, and a more personal, refined and intimate cuisine.

Real Balneario is one of the very few restaurants literally set on the sand.

The Cantabrian Sea is more than a backdrop: it defines the light, the rhythm, the produce and the overall experience.
The sound of the waves and the horizon form part of the culinary narrative — a constant dialogue between nature and cuisine.

The building that now houses the restaurant was founded in 1916 as a Seawater Spa, under the protection of King Alfonso XIII. Since then, it has retained the title of “Real” (Royal), a symbol of its uniqueness and its bond with the town of Salinas.
Three generations of the Loya family have built a culinary project that stands as a benchmark in Asturias.

Team

At our restaurant, the team embodies the values that gave birth to this house: kindness, care and authenticity, always expressed through the discreet elegance that defines those who deeply love their craft.

Their precise and coordinated work ensures that every detail flows naturally.
Alongside Isaac, a team of 16 professionals brings talent, dedication and meticulous attention to detail, making the restaurant a truly unique space.

From kitchen and dining room to every area of maintenance, this diverse team works with precision and sensitivity so that each visit to Real Balneario becomes a memorable experience, defined by excellence and hospitality.

The Nobility of Asturian Produce

A close relationship is maintained with local suppliers, reflecting a strong commitment to proximity produce and to the excellence of the Cantabrian Sea and Asturias.

Seafood and fish from the Cantabrian, locally grown vegetables, artisanal butters and cheeses, Asturian meats and traditional stews treated with contemporary precision make up the pantry of Real Balneario.
There is no artifice here — only truth, respect and purity.

In addition, the restaurant collaborates with a farm located in Salas, from which the fabes (Asturian beans) and vegetables are sourced.
These complete an authentic, zero-kilometer pantry, further strengthening the restaurant’s direct bond with the land and its producers.
